TRUST Whiskey begins with 100% organic hull-less unmalted barley grown in Armstrong, British Columbia. It is triple-distilled in our handmade CARL single copper pot still. For just shy of four years, it has been quietly resting in mature 220-litre French white Burgundy barrels to slowly gain character, complexity and colour.
Distiller’s Tasting Notes at the still (81% alc./vol.)
Aromas of butterscotch, cacao bean and caramel punctuate the nose. The finish has a soft, yet dignified white chocolate character.
In The Bottle (42% alc./vol.)
On the nose, TRUST Single Cask – Burgundy presents a white chocolate and marzipan character married with robust barley notes. The mid-palate is rich, full and intense with cocoa, caramel and underlying fruit. At 42% alc./vol. the finish has a powerful concentration that is silky smooth and lingers on and on.
